I discovered this recipe years ago when I was working at Ottolenghi in London. Yotam and Sami always inspired us to be creative and bring in new ideas and this was mine one day. I found it in a magazine, described as a classic Sicilian salsa for fish and it works so fantastically well with any fish, especially a fatty one like mackerel, salmon or tuna as in this image. The combination of olives, sultanas/raisins and celery really doesn’t need much else, but the light dressing of vinegar and honey works beautifully and adds depth of flavour. I promise you won’t be disappointed, even if you’re not crazy about any one of the ingredients, as a combination it’s something super special.
